Blueberry-Stuffed Lamb Chops
Makes 4 servings
INGREDIENTS:
4 (4-ounce) lamb rib chops, about 1 inch thick
1/2 teaspoon garlic powder
1/2 teaspoon Cajun seasoning
1 cup Kitchen Basics® Beef Cooking Stock
1/4 cup Worcestershire sauce
1/4 cup olive oil
2 tablespoons lemon juice
1 cup fresh blueberries
3 tablespoons Domino® Granulated Sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter
STEPS:
Spray grill rack with nonstick nonflammable cooking spray.
Preheat grill to medium-high heat.
Trim fat from lamb. Slice lamb lengthwise down the center cutting to bone, but leaving bone intact.
Open butterflied meat, laying cut sides down on surface of cutting board.
Place plastic wrap over lamb; pound to 1/4-inch thickness using a meat mallet or rolling pin.
Open up the cut sides, like a book, and flatten with your hands. You’ll have 2 attached equal-size pieces that look sort of like a butterfly.
In a large resealable plastic bag, place one butterflied chop. Using a meat mallet or a heavy rolling pin, pound the meat to about 1/4-inch thickness.
Remove the chop from the plastic bag. Repeat with the remaining lamb chops.
Sprinkle flattened chops evenly with garlic powder and Cajun seasoning.
In a large resealable plastic bag, combine beef stock, Worcestershire sauce, olive oil, lemon juice, and lamb. Seal bag, and marinate in the refrigerator for 1 hour.
In a small bowl, combine blueberries, sugar, and cinnamon. Partially mash blueberry mixture with a potato masher; set aside.
Remove lamb from marinade, reserving marinade. In a small saucepan, add marinade. Bring to a boil; add butter, and cook until mixture is reduced by half. Set aside.
Spoon about 1/4 cup blueberry mixture onto half of each flattened lamb chop. Fold half of each chop over the blueberry mixture, and secure with wooden picks or silicone wraps.
Grill chops 3 to 4 minutes per side or to desired degree of doneness. Transfer lamb chops to a serving platter, and serve with reduced marinade. (Remove wooden picks or silicone wraps before serving.)
